Event organizer Karin Springer, who owns the Trumpeter restaurant, is trying to set the Guinness World Record for the largest amount of potatoes au gratin: 15,000 pounds. The potatoes used are from all 10 potato sheds in the Skagit Valley area. First-graders in the Mount Vernon School District grew the 50 pounds of garlic used in the super-sized side dish. The recipe also uses 200 gallons of cream, 400 pounds of cheese and 100 pounds of onion. The Spirit of the Spud is meant to bring awareness to the agricultural community in Skagit Valley, Springer says. "People don't give credit to the food grown in the community," she says. "(Potatoes are) our largest crop." More than 120 volunteers are helping with the event.
